Serves 12
- 3 lbs beef chuck roast
- Spices
- 4 cups low-sodium beef broth
- Salt & Pepper to season meat
Heat oven to 275 degrees F
Place meat in dutch oven. Add broth and season with salt & pepper and cook until tender (5-6 hours).
- 3 lbs chicken
Bring chicken to room temperature. Preheat oven to 325 degrees F. Place chicken in oven dish, cover with water or broth, cook until tender.
- 3 Avocados
- 1 lime
- 1/2 tsp kosher salt
- 1/2 tsp ground cumin
- 1/2 tsp ground cayenne
- 1/2 medium onion, diced
- 1/2 jalapeno pepper, minced
- 2 roma tomates
- 1 tsp cilantro
- 1 clove minced garlic
Toss avocado and lime. Drain and reserve lime juice. Mash with spices. Fold in other ingredients, add in 1 tbsp lime juice at the end.
