Allow forcing .tar.gz for all platforms, including Windows. #181

Currently, compress_assets only allows forcing to zip, but not to tar.gz.

Please allow forcing to tar as all platforms, including Windows, support them now and it would simplify things for users of my released packages to always be able to just extract tarballs instead of tailoring their archive handling just to Windows.

Windows 11 has tar support, so users can double-click to browse, or right-click to extract.
