Since we just released, now is a good moment to update our dependencies in our pixi and Julia environments. This fixes one issue noted by @deltamarnix, now our versions of pandas and pandas-stubs are the same:
This also extends our root julia environment a bit, adding https://github.com/JuliaDebug/Infiltrator.jl which is useful for debugging, and adding dependencies of the core project, such that we can use them directly in the root environment.
