Downgrade Docker dependency because of its dependency mess #125

Description

This PR downgrades Docker dependency, because v25.0.x introduced some mess between OTEL dependency and Docker (they are using package which does not exist anymore in the OTEL repo).

Changes include

  • Bugfix (non-breaking change that solves an issue)
  • Hotfix (change that solves an urgent issue, and requires immediate attention)
  • New feature (non-breaking change that adds functionality)
  • Breaking change (change that is not backwards-compatible and/or changes current functionality)
