Context

• It appears this is a longstanding request from users, as pointed out by @CarlosLopezDeLara to me
• We have discussed elsewhere (can't remember where though) that it would be nice [edit] here: [FR] - Make output of CLI commands consistent. #566
• The design is the same as [--output-format json|--output-format json] format becomes [--output-yaml|--output-json] #523, to guarantee consistency
• This will allow to skip using files in cardano-testnet here: https://github.com/IntersectMBO/cardano-node/blob/7b0076138b7073ea8101ffa758c170ec0c3c8094/cardano-testnet/src/Testnet/Process/Cli.hs#L127 Allowing to remove boilerplate, in particular counters for filenames.

How to trust this PR

• I have tested (cabal test cardano-testnet) this PR against the tests in cardano-testnet on this backport on cardano-cli's last release.
• I checked manually that the historical behavior was preserved.
• I tested the historical behavior on cardano-node: cardano-testnet: test new query utxo (do not merge) cardano-node#5674 ✅ -> GH pipelines are green 🍏
• I tested behavior of --output-json on cardano-node: cardano-testnet: simplify queryUtxos by not going through a file cardano-node#5675 ✅ -> GH pipelines are green or spurious unrelated timeout 🍏
