Changes the Windows config recommendation to true, aligning it with the MacOS/Linux.
Also return `undoing changes` and `ignoring files` to their original order. Listed timings add up to more than is suitable for the schedule (needs to be updated for the May course). Did not add back in episodes 17 (github issues) and 18 (remote branches from git).

Session 1 of the December 2023 course took less time than predicted. Based on that, we think more material can be covered in the second session, and so have added in some of the previously removed episodes. Final two episodes still left out (github issues, and remote branches from git). The episode timings do not add up properly for the schedule - left as-is for now due to time constraints, but made an issue to be revisited for May 2024 (#61).
