Fix: github action segmentation fault by pinning poetry version

• Fix: pin poetry version to 2.0.1 in github actions and env conda file
• Fix: install poetry via pyproject and pin to 2.0.1, clean duplicate parts of toml. update requirements files and poetry.lock
