🔖 Version bump to 0.6.1

Description

This PR updates the version number to 0.6.1 to draft a new release that will trigger the PyPI deployment again to fix the issue of missing Linux and macOS wheels. Many thanks to @simon1hofmann for reporting and fixing that issue before.
