[Bug] Update the quickstart.yml variables to match the casing of the connector schema names #60

Describe the issue

Currently all the source table variables in the quickstart.yml are all lowercased. However, in the connector schema tab these are not all lowercased. We need to update these to match the casing of the source tables in the connector schema tab.

Expected behavior

Quickstart can reference these tables properly and enable/disable accordingly.
