Python: Upgrading Mistral AI Connector to Version 1.0

Motivation and Context

This PR upgrades the MistralAI Connector to Version 1.0.

closes #9504

ToDo's

• Update Connector Classes to new Mistral Classes
• Update Unit Tests Classes to new Mistral Classes
• Added new Settings to PromptExecutionSettings
• Backwards compability of old settings to not break people
• Fix MyPy Issues

Description

Mistral released their new Version of their SDK, to enable compability with a major Version the connector needs to be updated to work with the newest Version.
