refactored

  • scripts - to be more usable from multiple invocation points
  • .env - example provided as .env_example with sane defaults that will run as is
  • docker-compose - updates to volume mounts and variable usage
  • docs - add a fully deployed example at https://mjstealey.com/

@JOduMonT - did some additional refactoring, script updates and a documented example of deploying to a digital ocean droplet.

Based on feedback from #19 the updated deployment scripts and documentation look to work as expected.
