samples: matter: bootloader size optimizations

Add LTO and size optimization configs for mcuboot and remove redundant configs. Set mcuboot size to `0xD000` for nRF54Lxx Remove PDK overlays. Signed-off-by: Maciej Baczmanski <[email protected]>
